I had left over mashed potatoes from our turkey dinner yesterday and green peppers diced up all ready that I had blanched and froze this fall from our garden. It was about 4 cups of mashed potatoes, I diced 1/4 of a medium onion, about 1/2 cup green pepper, 2 eggs from our chickens and salt & pepper. Mixed it all together in a bowl and dropped it a hot pan I had just made bacon in. Yummy, quick, inexpensive lunch! How do you use your left overs? This is one of my favorites that my mom would make.
